Reheat the fully cooked Barbacoa beef by following these steps:
  • Heat water in a pot until it’s very hot but not boiling (around 85 °C / 185 °F).
  • Place the sealed sous-vide bag in the hot water for 10 to 15 minutes.
  • Carefully remove the bag from the water. Open the bag and shred the beef.

Heat the tortillas in a skillet over medium heat for 1 to 3 minutes, until soft and warm.

Assemble the tacos:
Fill each warm tortilla with shredded Barbacoa beef, then top with:

  • Chopped fresh cilantro
  • Finely chopped white or red onions
  • A squeeze of lime juice
  • A touch of hot sauce, to taste
